Setagaya, Tokyo

The shoot began before dawn in the world-famous Tsukiji fish market, where I photographed sushi chef Yutaka Arai as he selected his catch of the day.

Back at his sushi bar in suburban Setagaya, I shot his preparations for the day, which began with an offering of salt, rice and sake – three elements vital to his livelihood – to the kami, or household gods. There was no trace of plastic anywhere in his workspace, just steel, cedar wood and ceramic bowls.
